Amazing Lemon Roast Potatoes

Ingredients:

8 large potatoes, peeled and cut into large chunks
2 tbsp chicken stock concentrate (I use the paste but the powder kind works too)
1/2 cup boiling water
juice and zest of 2 lemons
2 tbsp butter
plenty of fresh cracked pepper
1 small bunch fresh chives or 3 scallions, chopped
sour cream to serve

Directions:


  • Preheat oven to 350 F
  • Place the potatoes in a large roasting tray so that they are in just one layer
  • In a measuring cup, place the stock concentrate and pour over the boiling water.  Stir to dissolve, then add the zest and juice of the lemons.  Stir in the butter until melted and add pepper to taste. (You dont need salt as the stock concentrate is generally very salty)
  • Pour the liquid over the potatoes and stir to coat all of them in the sauce.  Place in the oven.
  • Bake for 1 hour, stirring every 15 minutes to coat the potatoes in the sauce.
  • The potatoes are ready when the liquid has reduced and thickened to coat all of the potatoes and they are beginning to get caramelized and brown.
  • Sprinkle with  freshly chopped chives and serve with sour cream
